Watermelon & Feta Salad

This Watermelon & Feta Salad is a fast and easy light meal to put together, full of flavour and nutrition. Be sure not to skip out on the black pepper to give your salad that little kick. Enjoy as a light meal, appetiser or even just as a yummy snack.

Ingredients

  • Watermelon – 500g-700g
  • Red/White Onion – Half a red onion, thinly sliced (optional)
  • Feta Cheese – 1/3 Cup, crumbled
  • Fresh Mint – 1 Bunch, leaves separated or roughly chopped
  • Olive Oil – 2 tbsp
  • Black Pepper – 1/8 tsp
  • Method

    – Place all ingredients into a large bowl and drizzle with the olive oil and black pepper.

    – Serve as a light snack, breakfast or appetizer to a main mail.
