How To Make The Perfect French Omelette

Believe it not, French Omelette is one of the hardest things to get right. In fact, many chefs have said that an entire interview’s success hinged on this one dish. The good news however, is that once you get it right, you’ll find that it really is quite simple.

To begin, beat your eggs, heat your butter (preferably in a non-stick pan), and start cooking! Once the eggs are in the pan, move quickly. Swirl your pan in a circular motion and gently stir to create curdles.  I personally am partial to a rubber spatula, but you can also use chopsticks, as shown by Queer Eye hottie Antoni Porowski.

Without breaking your eggs, continue until the base is just set and the edges are starting to break away. Take off the heat – the top part will be quite runny, but that’s okay.

Season the omelette with salt and drizzle the cheese down the middle. Shake the pan and move the omelette closer to the edge.  Have a plate handy and start gently folding and flip the omelette onto the plate. Garnish with coarse salt, a tad more butter and chives. Voila, and enjoy!
