Tomato Tart

This Tomato Tart is the perfect summer tart with easily accessible and fresh ingredients. A perfect crowd pleaser and great as a side, appetizer or light meal. Serve with a green salad and you have yourself a delicious summer meal!

Tomato Tart

Serves : 4 – 6
Prep Time : 5 – 10 MINUTES
Cooking Time : 20 – 25 MINUTES

Ingredients

  • Cherry Tomatoes – 500g, halved
  • All Purpose Flour – to line the baking sheet
  • Frozen Puff Pastry Sheets – 1 pc, frozen
  • Gruyere Cheese – 120g, grated
  • Salt – to taste
  • Black Pepper – to taste
  • Dried Oregano – 1 tsp
  • Olive Oil – to drizzle
  • Method

    – Place the tomatoes in a strainer over a large bowl and sprinkle with salt. Give them a good toss and set aside for 30 minutes.

    – Meanwhile, arrange a rack in the middle of the oven and pre-heat to 200°C.

    – In an oven pan, sprinkle some flour and roll out the pastry sheet and sprinkle the top with flour as well so it is not sticky. Crimp the edges.

    – Sprinkle most of the grated cheese over the puff pastry.

    – Remove the tomatoes from the strainer and pat them dry with a paper towel. The salt will have made the tomatoes release their excess fluid.

    – Arrange the tomatoes in a single layer over the cheese.

    – Bake in the oven until golden-brown and crisp for 20 to 25 minutes.

    – Remove from the oven and sprinkle the remaining cheese over the edges of the pastry and place back in the oven for another 5 – 10, or until the cheese is slightly browned and crisp.

    Drizzle with the olive oil and sprinkle with the oregano, salt and pepper.

    – Let the tart rest for 5 minutes and serve with a side salad.
