Seafood Paella

Another great way to say Hello to summer! This Seafood Paella is packed full of your favourite seafoods, zesty flavour enhancers and a delicious sofrito, this meal it yet another one of yufeed’s best crowd pleasers! Be sure to serve with some extra lemon wedges on the side.

Ingredients

  • Calrose Rice – 3 Cups, rinsed and soaked for at least 2 hours
  • Olive Oil – 2 tbsp
  • Onion – 1 pc, Large, finely chopped
  • Garlic – 6 Cloves, crushed or finely chopped
  • Ginger – 1 tbsp, grated
  • Frozen Prawn – 500g , frozen
  • Arabic 7 spice – 1 tsp
  • Cumin – 1 tsp
  • Paprika – 1 tsp
  • Frozen Peas – 250g, frozen
  • Tomato – 2 pc, Large, minced
  • Red Capsicum – 1 pc, cubed
  • Saffron – 1/4 tsp, crumbled
  • Salt – to taste
  • Frozen Calamari – 400g, frozen
  • Yellow Capsicum – 1 pc, cubed
  • Mussels – 500g
  • Method

    – Heat the olive oil and vegetable oil over medium heat, and sauté the onion, garlic and ginger.

    – Add the shrimp and calamari. Stir and season the seafood, then add the mixed spices, cumin, and paprika. Mix until well blended, and the water released by the seafood has mostly evaporated.

    – Cook on low heat and take care not to overcook the prawns.

    – Add the peas, tomatoes and capsicums. Stir for 1 – 2 minutes, then add 3 cups of water and saffron.

    – Bring to a boil, then add the rice. Wait for the rice mixture to come to a boil, then reduce to a simmer, cover and cook on low heat for approximately 25 minutes, or until the water is completely absorbed.

    – Place the mussels on top of the rice and cover again, letting the steam cook and heat the mussels through.

    – Garnish with chopped parsley and serve.
