Easiest Roast Beef

If your go-to holiday meal is beef, then here’s a recipe to make your life that much easier! Try our easiest Roast Beef recipe this Christmas. There’s barely any prep work involved, which makes for a stress-free evening and a fun night with friends and family.   

Easiest Roast Beef

Serves : 8 – 10

Cooking Time : 25 – 35 MINUTES

Ingredients

  • Beef Fillet – 1 Whole Tenderloin, 2 – 2.5kg, tied firmly with a string
  • Butter (unsalted) – 2 – 3 tbsp, at room temperature
  • Mustard – 1 tbsp, heaped & mixed in with the butter
  • Salt – 1 tbsp, or enough to generously season the beef on all sides
  • Peppercorns – 1 tbsp, coarsely ground – enough to generously season the beef on all sides
  • Cornstarch – 2 tsp, mixed in 1/4 cup warm water
  • Method

    – Preheat the oven to 260°C

    – Use your hands to spread the butter and mustard all over your beef. Sprinkle evenly with the salt and pepper.

    – Roast in the oven for exactly 25 minutes for medium rare, 30 minutes for medium, 33-35 minutes for medium-well and 38-40 minutes for well done. Note: this will vary from oven to oven; all depends on how hot your oven is.

    – Remove the beef from the oven, cover it lightly with aluminium foil, and allow it to rest at room temperature for 20 minutes.

    – During this time, pour the meat juices into a small pot and bring to a boil. Add the cornstarch to thicken and leave to simmer for at least 10 minutes. Taste and season with salt if needed. If the gravy is too thick, simply add more water to dilute.

    – Remove the strings from the beef and cut into slices.

    – Serve with the gravy over mashed potatoes, with green beans or a fresh salad on the side.
