A yufeed summer favourite, and luckily, oh-so-easy to make! As a platform that’s constantly looking for ways to make home cooking easy and accessible, this recipe is a perfect example of how you can create a perfectly delicious meal with the simplest of ingredients.

Though cooking in summer is not ideal, especially since most of us tend to gravitate towards cooler options like salads, some of us still enjoy the occasional hot meal; enter yufeed’s Minty Summer Pasta.

Not only is this recipe foolproof, but it’s packed full of ingredients that many of you in all likelihood already have sitting in your pantry or fridge, making it a great way to use up several items before you take off for your summer holidays.

It is also packed full of fresh ingredients such as mint, basil, garlic and cherry tomatoes – making it both healthy and a great hearty summer treat! And though the recipe calls for ‘spaghetti’, there is no limitation for what type of pasta you can go for; opt for a whole wheat or gluten-free option if you’d like an even lighter dish.

As is the case with most easy, pantry-friendly recipes, many of these ingredients can easily be substituted for something else. Don’t have pepperoncini? No worries, jalapenos, or any pickled peppers will do! You’re out of anchovies? That’s okay, capers or just a little more salt will do the trick! Worried you may not have enough fresh herbs? No problem, substitute with dried herbs instead and a drizzle of fresh lemon juice.

Minty Summer Pasta

Ingredients

Spaghetti : 500g
Cherry Tomatoes : 250g
Fresh Mint : Handful, chopped
Fresh Basil : Handful, roughly chopped
Garlic : 1 Clove, or 1/4 tsp garlic powder
Anchovies : 2 pc
Pepperoncini : 1/2 tsp
Salt : 1/2 tsp, for the sauce plus more to salt the pasta water
Olive Oil : 1/3 Cup
Parmesan Cheese : 35g, grated (for serving)

Method

Cooking time : 25 – 30 minutes
Prep time : 10 – 15 minutes
Serving size ; 4 – 6

Description

– Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al-dente.

– In a food processor, add all the other ingredients and puree while slowly adding the olive oil to get the desired creamy consistency.

– Add the sauce to the pasta and mix well. Top with the grated parmesan and serve – preferably at room temperature.
