Sweet Potato Muffins are a delicious and delightful way to introduce autumn to your children’s lunchbox. And not to mention, delicious!

Method
– Pierce the potatoes with a fork and place on a parchment lined baking sheet. Bake in a pre-heated 200°C oven for 40 – 45 minutes, or until the potatoes are completely cooked through. Take out of the oven and set aside to cool.
– Once cooled, peel off the skin and mash the potatoes with a masher until smooth and not at all lumpy – these should yield 1 1/2 cups worth.
– In a large bowl, combine the flour, cinnamon, baking soda, baking powder and salt.
– In a separate bowl, combine the sugar, oil, eggs, and vanilla (if using).
– Stir the wet ingredients into the dry ingredients, and then add the mashed sweet potatoes and mix until nicely combined.
– Use a ladle to pour the batter into a muffin tray.
– Bake in a pre-heated 180 °C for 25 minutes or until a toothpick inserted into the centre of one of the muffins comes out clean.
– Serve warm or at room temperature or pack as a school snack.
