Breakfast Burrito

Don’t start your day with takeout! Make your favourite breakfast burrito at home, filled with delicious goodness and your choice of sides and toppings.    

Sweet Potato Muffins

Serves : 2 – 4
Prep Time : 5 MINUTES
Cooking Time : 10 – 15 MINUTES

Ingredients

  • Vegetable Oil – 1 tbsp
  • Black Beans – 1 Can, drained, rinsed and dried
  • Egg – 4 Large, whisked
  • Mexican Cheese – 1/3 Cup, grated (cheddar cheese will also do)
  • Tortilla Wrap – 4
  • Guacamole – 1 Cup
  • Salsa – 2/3 Cup
  • Salt – to taste
  • Black Pepper – to taste

  • Method

    – Heat the oil in a pan over medium heat and cook the eggs until scrambled to your desired consistency.

    – Warm the tortillas simultaneously in a microwave or under the broil in the oven.

    – Place the eggs on the tortillas, along with the guacamole, salsa, black beans, cheddar and sour cream.

    – Wrap tightly and cut in half before serving.

    – Note: Option to also heat the burritos once tightly wrapped on a dry pan over medium high heat until slightly toasted on either side.
