  • White Pepper – 1 tsp
  • Black Pepper – 1 tsp
  • Onion Powder – 1 tsp
  • Garlic Powder – 1 tsp
  • Salt – 1 tsp
  • Bay Leaf – 2
  • Apple Cider Vinegar – 2 tbsp
  • Lemon – 1, juiced
  • Olive Oil – 2 tbsp
  • Powdered Cloves – 1 tsp
  • Pickles – 1 Jar (for serving)
  • Tomato – 4, halved and thinly sliced (for serving)
  • Red/White Onion – 3-4, halved, thinly sliced and drizzled in sumac (for serving)
  • Lettuce – Optional (for serving)
  • Pita Bread – 8 Medium (for serving)
  • Taratur (Tahini Mix) (*)
  • Method

    – Mix all the spices and vinegar together in a large bowl and add the chicken. Use your hands to combine and ensure every piece is properly coated. Leave to marinate for at least 3 hours or preferably overnight in the fridge.

    – Take the chicken out 2 hours before cooking to bring up to room temperature.

    – Heat the oil in a large pan over medium heat, and fry the marinated chicken strips until cooked through. If the pan is not large enough, do this in batches so as not to overcrowd the pan.

    – Taste, and season with more salt if needed.

    – Once cooked, transfer the chicken, along with its juices to a serving platter. Serve warm with a side of tahini mix, yogurt, pickles, sliced tomatoes, sliced onions, lettuce, sumac, pita bread and fries (optional).

    – NOTE: RECIPE FOR TAHINI MIX IS AVAILABLE IN THE PANTRY.

    – Serve immediately for a delicious DIY chicken shawerma platter.
