Tomato Baked Gnocchi

Baked pasta at its best! This Tomato Baked Gnocchi is a comfort dish like no other and the perfect way to say hello to fall. Enjoy with a side of your favourite green salad for a little added freshness.    

Tomato Baked Gnocchi

Serves : 4 – 6
Prep Time : 5 – 10 MINUTES
Cooking Time : 20 – 25 MINUTES

Ingredients

  • Olive Oil – 2 tbsp
  • Garlic – 4 Cloves, crushed
  • Tomato Puree – 3 Cups
  • Maple Syrup – 1 tsp
  • Spinach – 100g
  • Fresh Basil – 80g, plus extra to garnish
  • Gnocchi – 800g, fresh
  • Mozzarella Cheese – 3 Cups, grated
  • Parmesan Cheese – 1/3 Cup, grated
  • Salt – to taste
  • Black Pepper – to taste
  • Olives – for serving, preferably black olives
  • Method

    – Preheat the oven to 200°C.

    – Heat the olive oil in a large oven friendly pan.

    – Add the garlic and cook for 5 minutes until softened.

    – Add the tomato puree, maple syrup, spinach, basil salt and pepper and the gnocchi.

    – Stir for approximately 5 minutes until combined and the spinach has started to wilt.

    – Top evenly with the mozzarella cheese.

    – Put the pan into the oven for approximately 15 minutes; when the cheese is bubbling.

    – Top with remaining fresh basil and serve with a fresh salad and a side of black olives.
