Youvetsi (Greek Stew)

If Greece had a comfort dish, youvetski is definitely it. A stew full of healthy goodness, delicious flavours, yummy bites, and comes together perfectly in one big pot!   

Sweet Potato Muffins

Serves : 10 – 12
Prep Time : 15 MINUTES
Cooking Time : 2 HOURS 45 MINUTES

Ingredients

  • Cooking Oil – 2 tbsp
  • Onion – 1 pc, Large, chopped
  • Lamb Cubes – 1 1/2kg, cubed (on or off the bone)
  • Cloves – 5, or 1 tsp ground
  • Cinnamon Sticks – 2
  • Black Pepper – 1/2 tsp
  • Bay Leaf – 2
  • Cottage Cheese – 100g, or enough to spread over the top (or use kefalotyri cheese if you have it), grated
  • Salt – to taste
  • Tomato Paste – 2 tbsp
  • Chicken Stock – 500ml
  • Lamb Stock – 500ml
  • Orzo – 500g
  • Method

    – Heat the oil in a pan over medium heat and sauté the onions until fragrant and translucent.

    – Add the lamb cubes and sear on all sides until browned, season with salt, then take out of the pan and set aside.

    – In the same pan, sauté all the spices until fragrant, then add the lamb once again.

    – Mix in the tomato paste and stir to combine.

    – Pour in the stock and season with salt and pepper. Bring to a simmer, and leave to cook for 2 hours.

    – Add the orzo, and leave to cook for an additional 15 – 20 minutes. Taste and season with more salt if needed.

    – Remove the whole spices, transfer to an oven safe dish and drizzle with the cheese.

    – Bake in a pre-heated oven under the broil for 10 minutes, or until the cheese melts into the stew.

    – Let rest for 10 minutes and serve with a side salad.
