Yogurt & Macaroni

A perfect weeknight meal on those days when you’re not sure what to cook. Easy to make, full of flavour, and your kids will love it!

Sweet Potato Muffins

Serves : 4 – 6
Prep Time : 5 MINUTES
Cooking Time : 15 – 20 MINUTES

Ingredients

  • Cooking Oil – 3 tbsp
  • Minced Beef – 500g
  • Plain Yogurt – 1 1/3 Cups
  • Garlic – 1 Clove, crushed
  • Arabic 7 spice – 1 tsp
  • Salt – to taste
  • Pine Nuts – 1/3 Cup
  • Macaroni – 500g
  • Method

    – Bring a large pot of salted water to a boil and cook the pasta according to packet instructions or until al dente.

    – Mix the yogurt and garlic in a bowl. Taste and season with salt, then set aside.

    – Shallow fry the pine nuts in a small pan with 1 tablespoon of the oil, then take off the heat and set aside to cool.

    – Heat the remaining oil in a large pan over medium heat and sauté the minced meat until cooked through. Season with salt and seven spice.

    – Transfer the cooked pasta to a large serving dish.

    – Top with the yogurt, followed by the minced meat and garnish with the pine nuts.

    – Serve hot or warm.
