Wedge Salad

Calling all blue cheese lovers to try this Wedge Salad! A great recipe to have on hand during the summer months, and one that involves very little chopping. Also, you don’t have to be a blue cheese lover to love this salad, trust us on that!

Wedge Salad

Prep Time : 10 MINUTES
Cooking Time : 20 MINUTES

Ingredients

  • Lettuce – 1 Head Iceberg Lettuce, quartered and cored
  • Cherry Tomatoes – 200g, halved
  • Red/White Onion – Half a Red Onion, thinly sliced
  • Fresh Jalapeno Peppers – 2, thinly sliced (optional)
  • Turkey Slices – 4
  • Black Pepper – Freshly Ground, to sprinkle on top
  • Blue Cheese Dressing (*)
  • Method

    – Using parchment paper, line the turkey bacon on a baking tray and place in a 200°C pre-heated oven.

    – Cook for 18 – 20 minutes or until it has reached your desired level of crispiness. Make sure to check after about 10 minutes, as some ovens cook faster than others. Remove from the tray and transfer to a rack or paper towel, and set aside to cool.

    – Place the wedges on a platter.

    – Scatter the tomatoes, onion and jalapenos if using).

    – Break the cooled turkey bacon into bite sized pieces using your hands and scatter on top.

    – Crumble the blue cheese onto the salad.

    – Top each wedge with blue cheese dressing and sprinkle with the black pepper.
