Tomato Pasta Salad

Want a salad with a little more carb? Then, this Tomato Pasta Salad is for you! Packed full of tomatoes, basil and almonds, this salad works great as a whole meal in itself, and it screams summer fun! Enjoy with a side of your favourite crusty bread.

Tomato Pasta Salad

Cooking Time : 10 – 15 MINUTES

Ingredients

  • Wholewheat Pasta – 500g, preferably penne or fusili
  • Fresh Basil – 2 Cups, chopped
  • Slivered Almonds – 1/3 Cup, dry roasted (option to omit if packing as a school snack)
  • Mozzarella Cheese – 1/3 Cup, shredded
  • Garlic Powder – 1/2 tsp
  • Cherry Tomatoes – 4 – 5 Cups, halved
  • Olive Oil – 2 tbsp
  • Balsamic Vinegar – 1/4 Cup
  • Salt – to taste
  • Red Chili Flakes – to garnish, optional
  • Method

    – Bring a large pot of salted water to a boil and cook the pasta until al-dente, according to packet instructions. Drain the pasta, drizzle with some olive oil and set aside to cool down to room temperature.

    – To make the dressing, mix the garlic powder, olive oil, balsamic vinegar, pepper flakes, salt and pepper in a jar and set aside.

    – Pour the pasta in a large bowl, toss in the tomatoes, basil, almonds and mozzarella.

    – Add the dressing, mix to coat evenly and serve.
