Tomato Grilled Cheese

With summer quickly coming to an end, tomato season is almost over! Make use of the last good ones you have left and treat yourselves to a delicious end-of-summer Tomato Grilled Cheese sandwich!

Tomato Grilled Cheese

Cooking Time : 15 – 20 MINUTES

Ingredients

  • Tomato – 1 pc, Large, sliced
  • Salt – to taste
  • Dried Oregano – to taste
  • Sliced Bread – 8 pc, bread of choice
  • Butter (unsalted) – enough to spread over the bread slices
  • Cheddar Cheese – 250g, shredded
  • Swiss Cheese – 250g, slices
  • Method

    – Season tomatoes with salt and oregano and set aside.

    – Spread each piece of bread with a thin layer of butter. Place 4 slices of bread in a pan over medium heat (butter-side down). Top each slice with layers of the cheddar and Swiss.

    – Place sliced tomatoes on top and cover the pan until the cheese is just starting to melt.

    – Top the tomatoes with the remaining 4 bread slices, butter-side up. Press down on the sandwiches with a spatula for 2 – 3 minutes, then flip to the other side.

    – Press down until both sides are toasted and brown. Cut in half and serve immediately.
