Tomato & Garlic Lamb Chops

Ingredients

  • Lamb Cutlets – 10
  • Grapeseed Oil – 1/2 – 1 Cup, enough to coat the lamb chops
  • Tomato – 5 Large, very ripe and halved
  • Garlic Head – 1, cloves peeled and crushed
  • Salt – to taste
  • Method

    – In a large bowl or tupperware, pour in the oil and garlic. Take the halved tomatoes and squeeze their juices into the bowl, then add the tomatoes. Mix to combine.

    – Generously season the lamb chops with salt, then add to the bowl, tossing to combine and coat the lamb. Cover, and place in the fridge to marinate for several hours, or preferably overnight.

    – Before cooking, take the bowl out of the fridge to bring down to room temperature.

    – Heat a large pan over medium heat. Remove the lamb from the marinate and take off any bits of tomatoes or garlic that may have gotten stuck to them. Then cook the lamb chops for 3 – 4 minutes on each side, or until cooked to your preferred doneness (in batches if necessary). Discard whatever is left of the marinade.

    – Serve with warm white rice and a fresh salad.
