Tomato Avocado Salad

Full of fresh ingredients and easy to make! Topped with yufeed’s signature Mustard Maple Dressing, this Tomato Avocado Salad, with its anti-inflammatory properties, is a great way to reset your system and makes for a delicious light meal or side accompaniment to any main meal.

Ingredients

  • Tomato – 500g, chopped or substitute with cherry tomatoes (halved)
  • Cucumber – 1 Large, halved & sliced (optional)
  • Red Onion – 1 Small, halved & thinly sliced
  • Avocado – 2, cubed
  • Fresh Coriander – 1/3 Cup, roughly chopped
  • Salt – to taste
  • Maple Mustard Dressing (*)
  • Method

    – Place tomatoes, cucumber (if using), red onion, avocado, and coriander into a large salad bowl.

    – Drizzle with the maple mustard dressing and toss to combine. Taste and season with more salt if needed and serve.
