Texas Caviar Salad

With no shortage of vegetables in this Texas Caviar Salad, your gut will be in for a treat. Enjoy on its own, or pair with a side of grilled salmon or chicken for an added protein kick. Also, throw in a little arugula to make it even more Gut Friendly!    

Texas Caviar Salad

Serves : 4 – 6

Ingredients

  • Black Beans – 1 Can, drained and rinsed
  • Tomato – 1 pc, Large, deseeded and chopped
  • Canned Corn – 1 Can, drained and rinsed
  • Olives – 1/2 Cup, drained and chopped (optional)
  • Avocado – 1 pc, cubed
  • Red Capsicum – 1 pc, Small, chopped
  • Onion – 1 pc, Small, finely chopped
  • Fresh Coriander – 1/4 Cup, roughly chopped
  • Lime Juice – 2 tbsp
  • Maple Syrup – 1/2 tbsp
  • Chili Powder – 1/2 tsp
  • Cumin – 1 tsp
  • Salt – to taste
  • Olive Oil – 1/4 Cup
  • Method

    – Pour the lime juice, maple syrup, chili powder, cumin, salt and olive oil in a jar. Seal tightly, and shake to combine.

    – Pour all the remaining ingredients into a large bowl, and toss to combine.

    – Add the dressing to the salad and toss to combine. Serve immediately, or keep in the fridge to serve later. Enjoy!
