Stuffed Portobello Mushrooms

Nothing says light meal and comfort food quite like a stuffed mushroom! This Stuffed Portobelle Mushroom dish is a definite crowd pleaser, easy to make and the combination of cheese and breadcrumbs give it that perfect finish. Enjoy as an appetizer or light meal with a side of green salad or with a light tangy summer pasta.  

Stuffed Portobello Mushrooms Square

Cooking Time : 20 – 25 MINUTES

Ingredients

  • Portobello Mushrooms – 4 Large
  • Olive Oil – 1 tbsp
  • Egg – 1
  • Garlic – 2 Cloves, crushed
  • Spinach – 10 oz baby spinach
  • Fresh Crab Meat – 1/3 Cup
  • Parmesan Cheese – 1/2 Cup
  • Mozzarella Cheese – 1/4 Cup
  • Breadcrumbs – 1/2 Cup
  • Salt – to taste
  • Black Pepper – to taste
  • Method

    – Preheat the oven to 180°C.

    – Brush both sides of mushrooms with olive oil and season with salt. Arrange on a baking sheet and place in the oven for 12 – 15 minutes. Take out of the oven and drain any excess moisture from the dish.

    – Beat the egg, garlic, salt, and black pepper in a large bowl. Stir in the spinach, crab, parmesan, 3 tablespoons of the mozzarella, and 3 tablespoons of the breadcrumbs until evenly combined.

    – Divide the spinach mixture over each mushroom, and sprinkle with the remaining mozzarella and breadcrumbs.

    – Return mushrooms back into the oven, and bake for another 10 – 15 minutes, until top is golden brown and cheese is melted.

    – Serve with a side salad.
