Method
– Boil the artichokes straight from the freezer for 7 – 8 minutes.
– Drain, then deep fry until they are crispy and slightly golden. Remove from the oil, place on a rack or kitchen towel and season with salt.
– In a separate pan, use 1 tablespoon of the frying oil to shallow fry the pine nuts. Once fried, take off the heat and set aside.
– Remove the oil from the pan used to fry the artichokes, and leave 2 tablespoons worth to fry the onion and minced meat, and season with salt.
– Place the artichokes in an oven friendly dish, stuff and top with the minced meat mixture.
– Pour some hot water into the pan, enough that the artichokes are halfway submerged. Season the water with the spice mix, and half a chicken stock cube.
– Cover the dish tightly with aluminium foil and place in a 180 °C pre-heated oven for approximately 1 hour and 15 minutes.
– Place on a serving dish, scatter the pine nuts on top and serve.
