Another excellent make-ahead dish that is easy to store and pack. Add a slice or two of this Spinach & Feta Pie to your child’s lunchbox, and rest assured, they’ll be coming home a happy camper!

Method
– Heat the oil in a pan over medium heat and sauté the onions, then add the spinach and stir.
– Slowly pour in the crème while stirring, then season with salt and pepper.
– Add the egg to the mixture, then reduce or take off the heat.
– Roll out the puff pastry onto a baking dish and pour in the spinach mixture.
– Crumble the feta on top and bake in a pre-heated 180°C oven for approximately 30 minutes.
– Let the pie rest for 30 minutes before serving.
