Spicy Farro & Beans Salad

This Spicy Farro and Bean Salad is another hearty and delicious grainy vegan salad. With the nuttiness of the farro and the satiating goodness of the butter beans, along with the delicious tangy dressing, your taste buds will be guaranteed a treat! And let’s not forget the artichokes for that little extra flavour and protein.    

Spicy Farro & Beans Salad

Serves : 4 – 6
Prep Time : 10-15 MINUTES
Cooking Time : 30 MINUTES

Ingredients

  • Farro – 1 Cup, rinsed
  • Butter Beans – 2 Cans, drained and rinsed
  • Spring Onion – 3 Stalks, sliced
  • Fresh Red Chili Pepper – 2, thinly sliced (or a mixture or red and yellow peppers to add more colour)
  • Artichoke – 1 Jar, roughly chopped
  • Slivered Almonds – 1/2 Cup, toasted
  • Salt – to taste
  • Black Pepper – to garnish
  • Maple Mustard Dressing (*)
  • Method

    – Bring a pot of salted water to a boil and cook the farro for 25 – 30 minutes, until tender. Drain and set aside.

    – Once cooled (but still a little warm), add the butter beans, spring onions, red chilies and artichokes. Mix to combine, and drizzle with the maple mustard dressing. Taste and season with salt if needed.

    – Garnish with freshly grated black pepper and toasted almonds and serve.

    – Note 1: Recipes for the maple mustard dressing is available in the Pantry.
    – Note 2: When making the dressing, you can opt for the oil from the artichoke jar instead – this will intensify the flavour of the salad.

    – Allow the salad to sit for at least 1 hour, allowing all the flavours to infuse before serving.
