This Smoked Salmon and Potato dish is an interesting combination of hot and cold and makes for a great summer meal. Light, yet filling and easy to make. Enjoy with a side of ice-cold sparkling water or your favourite summer drink.

Method
– Preheat oven to 180℃.
– Pierce the potatoes several times on each side with a fork.
– Place potatoes into a bowl and drizzle with the olive oil. Use your hands to ensure the potatoes are fully coated in the oil
– Season with salt and combine using your hands to ensure the potatoes are nicely seasoned.
– Place in a baking dish and cook in the oven for approximately 50 minutes – 1 hour.
– Once cooked, use a sharp knife to cut into the potatoes, slitting down the middle up to 3/4 of the way through.
– Top each potato with a generous dollop or sour cream and 1 – 2 slices of smoked salmon.
– Garnish with fresh dill and serve.
