Scrambled Tofu

Kickstart your day with this high protein Scrambled Tufu. Full of delicious spices and flavour enhancers, this dish is sure to please and will keep you full straight through to lunch. Make it even better by pairing it with your favourite sliced bread and some fresh salad on the side.  

 

Scrambled Tofu

Ingredients

  • Tofu – 1 1/2 blocks, extra firm and crumbled
  • Tamari – 2 1/2 tbsp
  • Olive Oil – 2 tbsp
  • Red/White Onion – 1 Cup, diced
  • Garlic – 2 Cloves, crushed
  • Red Capsicum – 1 Cup, diced
  • Spinach – 1 Cup
  • Turmeric Powder – 1 tsp
  • Fresh Parsley – 1/4 Cup, whole leaves or roughly chopped
  • Black Pepper – to taste
  • Indian Black Salt – 1/2 tsp, optional (regular salt will also do)
  • Nutritional Yeast – 1 – 2 tsp, optional
  • Method

    – Crumble the tofu into a bowl, add the tamari, mix and set aside.

    – Heat the olive oil in a pan over medium-high heat. Add the onions and reduce heat to medium.

    – Sauté onions until translucent and golden, then add the garlic.

    – Once the onions and garlic have caramelized, add the red capsicum, spinach, and crumbled tofu.

    – Cook on high heat for 4 minutes, or until the ingredients begin to slightly brown.

    – Add the nutritional yeast, optional Indian black salt, turmeric, and pepper, and cook for another 3 – 5 minutes.

    – Garnish with the chopped parsley, and serve with bread.
