Salmon Tacos

This Salmon Tacos recipe makes a dish that is as delicious as it is aesthetically pleasing. The fact that it is so easy to make and comes together pretty quickly, makes it the perfect weeknight meal, and suitable for the whole family. Tip: serve with a side of pickled or fresh jalapenos to give it a little kick.

Ingredients

  • Salmon Fillet – 6
  • Grapeseed Oil – to grease the baking dish
  • Chili Powder – 2 tsp, mild or substitute with paprika if you prefer less spicy
  • Lime – 2, zest & juice
  • Salt – to taste
  • Tortilla Wrap – to assemble the tacos
  • Method

    – Preheat the oven to 220°C. Brush a baking dish with the oil and place the salmon fillets into the dish, skin side down. Mix the chili powder, lime zest, and salt in a small bowl. Brush the salmon with 1 tablespoon of the lime juice and sprinkle with the seasoning mixture.

    – Roast for 12 – 15 minutes, depending on the thickness of the fish, until the salmon is just cooked through.

    – Drizzle with the remaining lime juice and serve on top of tortilla with your preferred choice of toppings, sides and condiments.
