Safa’s Mini Tuna Sandwiches

Full of texture and flavour, this Eastern take on an old school Tuna Sandwich is an absolute treat! Though optional, do melt the cheese before serving.

Safa’s Mini Tuna Sandwiches

Ingredients

  • Tuna (canned) – 2 Large Cans, drained
  • Red/White Onion – 2 Small, finely chopped
  • Fresh Green Chili Pepper – 1, finely chopped
  • Green Capsicum – Half, cubed
  • Garlic – 1 Clove, minced
  • Lemon – 1, juiced
  • Olive Oil – 2 tbsp
  • Salt – to taste
  • Black Pepper – to taste
  • Cumin – 1/2 tsp
  • Turmeric Powder – 1/2 tsp
  • Fresh Parsley – 3 tbsp, finely chopped
  • Potato – 1 Medium, boiled and mashed
  • Plain Yogurt – 170g, preferably full fat
  • Tahini – 1 tbsp
  • Mayonnaise – 1 tbsp
  • Thousand Island Dressing – 1 tbsp
  • Pita Bread – 15-20 Mini
  • Mozzarella Cheese – 1/2 Cup, grated
  • Cheddar Cheese – 1/2 Cup, grated
  • Lettuce – 1/2 Cup, chopped
  • Rocca – 1/2 Cup
  • Garlic – 2 Cloves, minced
  • Salt – 1/2 tsp
  • Black Pepper – 1/2 tsp
  • Method

    For the tuna stuffing, pour the olive oil, onion, chili, and garlic into a preheated pan. Stir fry on medium heat until fragrant and golden, approximately 10-15 minutes. Add the tuna, bell pepper, and all the spices. Allow to cook for approximately 3 minutes. Add the potatoes and mix together. Once combined, turn off the heat, add the lemon
    juice and parsley and set aside.

    – Prepare the tahini sauce by mixing all the ingredients together. Open the bread from one side, add the lettuce and baby rocca, tahini sauce, and tuna stuffing. Sprinkle the cheese mixture on top and serve.

    – As an option, you can also place the sandwiches in the oven on low heat for 10-15 minutes to melt the cheese before serving.
