Jirjir (Rocca) Salad

This simple and delicious salad is full of flavour and goodness and is typical of both Middle Eastern and Mediterranean cuisine. You can make this as a light healthy lunch or as a side to any main meal

Cooking Time : 10 MINUTES

Ingredients

  • Lemon Juice – 2 tbsp
  • Olive Oil – 1 tbsp
  • Walnuts – 1/3 Cup
  • Sumac – 1/8 – 1/4 tsp
  • Tomato – 1, sliced
  • Red/White Onion – Half, thinly sliced
  • Kalamata Olives – 1/4 Cup, pitted, halved or sliced
  • Salt – to taste
  • Black Pepper – to taste
  • Rocca – 4 Cups
  • Method

    – Pre-heat oven to 180 °C.

    – Line the walnut on a baking sheet and dry roast until fragrant, approximately 10 minutes; be sure to remove them as soon as they release their fragrance to avoid burning them.

    – Set aside, season with salt and allow to cool for 15 minutes, then roughly chop.

    – Place all the vegetables and walnuts in a large bowl.

    – In a separate jar or small bowl, mix the sumac, lemon juice, olive oil and salt and pepper, and then pour and toss into the salad.

    – Serve as a side dish to any main meal.
