The latest in the yufeed taco list. This variation is simple, yet delicious; full of tang and zesty goodness. Be sure to generously pile on the refried beans for a more filling and protein packed meal.

Method
– Place the tomatoes and half the coriander in a bowl and drizzle with the lime juice. Season with salt, mix and set aside.
– In a separate bowl, mix the corn with the remaining coriander and set aside.
– Heat a pan over medium and add the refried beans. Toss until hot. Taste and season with salt if needed.
– Assemble your tacos; spread a generous layer of the beans on the base of the taco and top with the tomato mixture, sweetcorn mixture, avocado and pickled onion.
– Repeat with remaining tacos until done.
– Serve with a dollop of sour cream and some fresh chillies or sliced jalapenos if using.
