Refried Bean Tacos

The latest in the yufeed taco list. This variation is simple, yet delicious; full of tang and zesty goodness. Be sure to generously pile on the refried beans for a more filling and protein packed meal.

Refried Bean Tacos

Cooking Time : 5 MINUTES

Ingredients

  • Tomato – 1 Large, diced
  • Fresh Coriander – 1/3, roughly chopped
  • Sweetcorn – 1 Can, drained & rinsed
  • Lime – 1, juiced
  • Salt – to taste
  • Hardshell Tacos – 1 Packet
  • Refried Beans – 1 Can
  • Pickled Onions – 1/3 – 1/2 Cup
  • Avocado – 1-2, diced
  • Sour Cream – For Serving
  • Fresh Jalapeno Peppers – For Serving, sliced
  • Method

    – Place the tomatoes and half the coriander in a bowl and drizzle with the lime juice. Season with salt, mix and set aside.

    – In a separate bowl, mix the corn with the remaining coriander and set aside.

    – Heat a pan over medium and add the refried beans. Toss until hot. Taste and season with salt if needed.

    – Assemble your tacos; spread a generous layer of the beans on the base of the taco and top with the tomato mixture, sweetcorn mixture, avocado and pickled onion.

    – Repeat with remaining tacos until done.

    – Serve with a dollop of sour cream and some fresh chillies or sliced jalapenos if using.
