Pumpkin in Tahini Sauce

Pumpkin in Tahini Sauce

Serves : 4 – 6
Prep Time : 10 MINUTES
Cooking Time : 45 MINUTES

Ingredients

  • Bulgur Wheat – 2 Cups, or substitute with Farro
  • Sunflower Oil – 2 tbsp, or any preferred cooking oil
  • Onion – 1 Medium, diced
  • Minced Beef – 500g, can also use minced lamb
  • Salt – to taste, or as instructed
  • Black Pepper – 1/2 tsp
  • Pumpkin – 600, halved and cut into 1/2-inch slices (or substitute with butternut squash)
  • Walnuts – 1/2 Cup, roughly chopped
  • Taratur (Tahini Mix) (*)
  • Method

    – Bring a pot of water to a boil and cook your bulgur or farro as per packet instructions. Once done, set aside.

    – Heat the oil in a large pan, and sauté the onion with the minced meat until browned and fragrant. Season with ½ teaspoon pepper and ½ teaspoon salt. Mix to combine, then take off the heat and set aside.

    – In a separate pan, sauté the pumpkin/squash until half cooked and slightly browned.

    – Add hot water to just cover the meat mixture and top it off with the sautéed pumpkin slices. Simmer uncovered for approximately 10 minutes.

    – Add the tahini mix and stir in carefully.

    – Note: Recipe for the Tahini Mix is available in the Pantry, and you will need TWO batches for this recipe.

    – Simmer for an additional 2-3 minutes, then take off the heat (this is not a saucy dish).

    – Add walnuts on top and and serve with the cooked bulgur or farro or any choice of grain.
