Prawn Saganaki

This flavourful Prawn Sagenaki dish works perfectly with a green salad and some crusty bread to soak up all the sauce. Enjoy as a light main meal or serve as an appetizer at your next spring gathering.

Prawn Saganaki

Serves : 4 – 6
Prep Time : 15 MINUTES
Cooking Time : 25 – 30 MINUTES

Ingredients

  • Red/White Onion – 1 Large, finely chopped
  • Olive Oil – 1/4 Cup
  • Sugar – 1/4 tsp
  • Dried Thyme – 1/2 tsp
  • Dried Oregano – 1 1/2 tsp
  • White Vinegar – 2 tbsp
  • Chopped Tomatoes (canned) – 1 Can
  • Tomato Puree – 1/3 Cup
  • Feta Cheese – 150g, cubed
  • Prawns – 16 – 18 Jumbo, deveined and cleaned
  • Method

    – Heat the oil in a large pan over medium heat, and sauté the onion until fragrant and translucent.

    – Add both types of tomatoes, sugar, seasoning, dry herbs and vinegar, stir and bring to a low boil.

    – Simmer covered for approximately 15 minutes, then add the prawns. Stir gently into the sauce and leave for about 7 minutes uncovered.

    – Transfer to an oven-friendly dish, add the feta cheese and grill for 5 minutes under the broil until the cheese is melted and golden.

    – Serve with rice or bread.
