Pickled beetroot salad

Ingredients

  • Rocca – 1 Bag
  • Red/White Onion – 1 Small, diced
  • Fresh Parsley – 1 Cup, roughly chopped
  • Sweetcorn – 1 Cup, unsalted
  • Beetroot – 1 Jar, pickled
  • Cucumber – 2, cubed
  • Red Cider Vinegar – 1 tbsp (optional)
  • Maple Mustard Dressing (*)
  • Method

    – Place all ingredients into a large bowl.

    – Drizzle with the red cider vinegar (if using) and Maple Mustard Dressing.

    – Note: Maple Mustard Dressing recipe is in the Pantry.

    – Toss to coat and serve as a light meal, appetizer, or side to any main meal.
