Method
– Heat the oil in a large pot over medium heat and shallow fry the onions.
– Add the peas and carrots. Stir until combined, then add the tomato paste and spice mix.
– Mix again until well combined, then add the meat and stock and season with salt.
– Bring to a boil, then reduce to a simmer and cook for approximately 20 minutes. If the stew feels too thick add more water.
– Serve warm over white rice.
