Pea and Carrot Stew

Serves : 6
Prep Time : 10 – 15 MINUTES
Cooking Time : 20 – 25 MINUTES

Ingredients

  • Red/White Onion – 1, chopped
  • Peas – 2 900g Bags, frozen
  • Carrot – 2 Large, cubed
  • Tomato Paste – 3 tbsp
  • Lamb Cubes – 500g, pre-cooked
  • Lamb Stock – 1 Ltr
  • Arabic 7 spice – 2 tsp
  • Salt – to taste
  • Lamb Cubes & Stock (*)
  • Method

    – Heat the oil in a large pot over medium heat and shallow fry the onions.

    – Add the peas and carrots. Stir until combined, then add the tomato paste and spice mix.

    – Mix again until well combined, then add the meat and stock and season with salt.

    – Bring to a boil, then reduce to a simmer and cook for approximately 20 minutes. If the stew feels too thick add more water.

    – Serve warm over white rice.
