Pan Fried Sardines

Pan Fried Sardines are a summertime favourite, topped with onions, lemon and a hint of red pepper. Finished off with a sprinkle of parsley for some freshness and goes great with a simple green salad or some well-seasoned boiled potatoes if you prefer a heartier meal.

Pan Fried Sardines

Prep Time : 5 – 10 MINUTES
Cooking Time : 10 MINUTES

Ingredients

  • Olives – 3 tbsp
  • Red/White Onion – 1, halved and thinly sliced
  • Garlic – 2 Cloves, sliced
  • Sardines (canned) – 2 Cans
  • Lemon – 1, juiced
  • Fresh Red Chili Pepper – 1, sliced
  • Salt – to taste, preferably ground coarse salt
  • Black Pepper – to taste, preferably ground coarse pepper
  • Fresh Parsley – Handful, roughly chopped (to garnish)
  • Method

    – Heat the olive oil in a pan over medium heat and add the onion until translucent.

    – Add the garlic and fry for a few seconds.

    – Add the sardines and sauté with the onion and garlic for 2 – 3 minutes.

    – Add the chilli pepper and stir in to combine. Squeeze the lemon into the mix.

    – Season with the salt and garnish with the parsley.

    – Serve immediately with buttered bread.
