A savory, fragrant and comforting single pot lamb and vegetable dish filled with hearty vegetables and lamb cubes.

Method
– Heat the oil in a large pot over medium heat and sauté the onion until fragrant.
– Add the remaining vegetables, followed by the tomatoes, lamb cubes and stock.
– Season with salt and add the tamarind paste.
– Bring to a boil, then reduce to a simmer and let cook for approximately 30 minutes.
– Add the garlic and dried mint and stir to combine.
– Taste and season with more salt if needed.
– Simmer for a further 5 minutes and serve hot or warm with rice.
