Okra with Lentils

Our Okra with Lentils dish is yet another delicious comfort meal that comes together fast and quick. The combination of the lentil mixture, topped with yogurt and added chilis makes for a great hot and cool effect. Just be sure not to pass on the bread, as you’ll need something heaty to scoop up your stew!     

Okra with Lentils

Serves : 4 – 6
Prep Time : 5 – 10 MINUTES
Cooking Time : 30 – 40 MINUTES

Ingredients

  • Red Lentils – 1 Cup, washed and rinsed
  • Okra – 1 Cup, washed (if fresh is not available, you can use frozen)
  • Lemon Juice – 1/4 Cup
  • Salt – to taste
  • Fresh Basil – 8 Leaves
  • Garlic – 5 Cloves, peeled
  • Vegetable Oil – for frying
  • Method

    – Place the lentils and okra in a medium to large pot. Add 2 cups of water for a thick consistency or more if you prefer more soup-like stew. Bring to a boil, then reduce to a simmer and cook for at least 20 minutes, until the lentils are tender. Mix well and add the lemon juice and salt. Continue to simmer for another 10 or so minutes until the mixture has noticeably thickened, stirring occasionally throughout.

    – Using a mortar and pestle, or mini processor, crush the basil leaves, garlic and salt and fry them in a pan with the oil until the garlic turns crispy and golden.

    – Pour over the okra and lentils, stir until combined and remove from the heat. Option to top with some yogurt, chili flakes or red chili peppers and serve with Arabic bread.
