Mushroom Soup

A delicious Mushroom Soup with a lot of bite! Be sure to drizzle that olive oil on top before serving and enjoy with a side of bread.  

Mushroom Soup

Serves : 6 – 8
Prep Time : 15 MINUTES
Cooking Time : 20 – 25 MINUTES

Ingredients

  • Butter (unsalted) – 1 tbsp
  • Red/White Onion – 1, diced
  • Potato – 1 Small, cubed
  • Water – 8 Cups
  • Button Mushroom – 250g, roughly chopped
  • Salt – to taste
  • Black Pepper – to taste
  • Olive Oil – to drizzle before serving (optional)
  • Portobello Mushrooms – 2, roughly chopped
  • Dried Porcini Mushroom – 1/2 Cup, roughly chopped
  • Method

    – Heat the oil and butter in a large pot and sauté the onion until translucent and fragrant.

    – Add the potatoes and mushrooms.

    – Mix until combined, pour in the water, season with salt and pepper, and bring to a boil.

    – Cover, reduce the heat and simmer on low for 20 minutes. Taste and adjust the seasoning if needed.

    – Take off the heat and blend the ingredients using an immersion blender until you reach the desired consistency.

    – Pour soup into a bowl, drizzle some olive oil on top and serve with bread.
