Miso Aubergines

yufeed’s Miso Aubergines are a treat for aubergine lovers! Made even more special with a generous topping of miso paste. Be sure to opt for an organic brand to ensure the paste doesn’t contain too many preservatives or isn’t too heavily processed.

Cooking Time : 20 – 30 MINUTES

Ingredients

  • Aubergine – 2 Large, cut lengthwise into quarters
  • Soy Sauce – 1 tbsp
  • Rice Vinegar – 1 tbsp
  • Sugar – 1 tbsp
  • Grapeseed Oil – 1 tbsp
  • Sesame Seeds – to garnish (optional)
  • Fresh Chives – to garnish (optional)
  • Method

    – Mix the soy sauce, vinegar and sugar in a bowl until well combined to create a miso paste.
    – Heat the oil in a pan and slightly sauté the aubergines on all sides.
    – Take off the heat and brush each one with the miso paste.
    – Place in a pre-heated 180°C oven for 20 minutes, or until the aubergines are cooked through.
    – Option to garnish with some sesame seeds or fresh herbs before serving.
