Meaty Lentil Stew

This is comfort home-cooking at its best! This one-pot meaty Lentil Stew comes together quickly and easily and pairs perfectly with a bowl of steamed white rice.   

Meaty Lentil Stew

Cooking Time : 20 – 25 MINUTES

Ingredients

  • Minced Lamb – 500g
  • Arabic 7 spice – 1 1/2 tsp
  • Red/White Onion – 1, chopped
  • Potato – 1 Large, cubed
  • Sweet Potato – 1, cubed
  • Brown Lentils – 1 Can, drained and rinsed
  • Tomato Paste – 2 tbsp
  • Salt – to taste
  • Method

    – Heat the oil in a large pot over medium heat and sauté the onion until translucent, then add the minced meat and fry until browned.

    – Season with salt, spice mix, and bay leaves.

    – Add the potatoes, sweet potatoes and tomato paste. Stir and add enough water to cover. Bring to a boil, then reduce to a simmer, and let cook for 15 minutes.

    – Add the lentils and salt if needed.

    – Simmer for an additional 5 minutes and serve with rice.
