Method
– Heat the oil in a large pot over medium heat and fry the onions until soft.
– Add the water, salt, pepper and cumin, and bring to a boil, then add the lentils, and boil for 5 minutes, and reduce to a simmer.
– Cover and leave to cook on low heat for approximately 30 minutes until the lentils are cooked through.
– Using an immersion blender, blend the lentils and add the lemon juice.
– Serve with parsley and dried croutons.
