Lentil Soup

Satiate yourself with this hearty Lentil Soup, full of nutritional goodness and finish off with a drizzle of lemon to give it a little zest.

Prep Time : 10 MINUTES
Cooking Time : 35 – 40 MINUTES

Ingredients

  • Water – 1 1/2 Ltr.
  • Cumin – 1 tsp
  • Salt – to taste
  • Black Pepper – to taste
  • Brown Lentils – 3 Cups, washed, soaked for 30 minutes and drained
  • Red/White Onion – 1, diced
  • Fresh Parsley – to garnish
  • Dried Croutons – to garnish
  • Lemon – 1, juiced
  • Method

    – Heat the oil in a large pot over medium heat and fry the onions until soft.

    – Add the water, salt, pepper and cumin, and bring to a boil, then add the lentils, and boil for 5 minutes, and reduce to a simmer.

    – Cover and leave to cook on low heat for approximately 30 minutes until the lentils are cooked through.

    – Using an immersion blender, blend the lentils and add the lemon juice.

    – Serve with parsley and dried croutons.
