Method
– Mix the marinade ingredients in a small bowl. Slather onto the top and sides of the salmon. Leave to marinate for at least 1 hour.
– Pre-heat oven broiler and place the shelf so that it is approximately 20cm away from the heat.
– Place salmon in an oven tray or dish, skin-side down, and drizzle each fillet with a little bit of the olive oil and scatter the rosemary sprigs and lemon wedges over and around the dish.
– Cook for approximately 11 – 12 minutes, or until the fillets are just cooked, they should be extremely flaky.
– Drizzle with some fresh lemon juice and serve!
