Kimchi Grilled Cheese

Our Kimchi Grilled Cheese is gut friendly and also insanely delicious! Because, who doesn’t love a grilled cheese sandwich? Make it extra healthy by opting for your favourite sourdough bread and it wouldn’t hurt to make cut back somewhat on the mayo and the cheese!        

Kimchi Grilled Cheese

Cooking Time : 5 – 10 MINUTES

Ingredients

  • Mayonnaise – 2 tbsp, option to also use kewpie mayonnaise
  • Hot Sauce – 1 – 2 tsp, according to taste (Sriracha works well in this recipe)
  • Sesame Seeds – 1/2 tsp
  • Sliced Bread – 4
  • Gruyere Cheese – 1/2 Cup, grated
  • Cheddar Cheese – 1/2 Cup, grated
  • Garlic Powder – 1/2 tsp
  • Kimchi – 1/2 Cup, roughly chopped
  • Method

    – Combine the mayonnaise, hot sauce and sesame seeds in a bowl.

    – Spread one side of each piece of bread with the mayonnaise mixture. Turn the pieces over so that the mayonnaise sides are facing down.

    – Combine the cheese and garlic powder in a large bowl.

    – Place a layer of the cheese mixture onto 2 slices of bread, leaving a tiny bit behind. Top the cheese with the kimchi, then add the remaining cheese on top of the kimchi. Top with the remaining bread (mayonnaise side facing out).

    – Heat a large pan over medium heat, and transfer the sandwiches into the pan. Using a spatula press down to toast the bread and melt the cheese. Once the bottom is nicely browned, turn over onto the other side, press down again and cook until the cheese is fully melted.

    – Slice in half and serve.
