Kale & Quinoa Salad

Kale & Quinoa Salad

Serves : 6 – 8

Ingredients

  • Kale – 8 Cups Packed, chopped
  • Olive Oil – 1 tbsp
  • Salt – to taste
  • Black Pepper – to taste
  • Quinoa – 1 Cup, preferably tri-coloured, but any type will do
  • Water – 2 Cups
  • Fresh Parsley – 1/4 Cup, roughly chopped (optional)
  • Fresh Mint – 1/4 Cup, roughly chopped (optional)
  • Red/White Onion – 1 Small Red Onion, halved and thinly sliced (optional)
  • Walnuts – 1/3 Cup, pre-roasted and roughly chopped
  • Feta Cheese – 1/4 Cup, crumbled
  • Maple Mustard Dressing (*)
  • Method

    – Place the kale in a large bowl and drizzle with the olive oil, salt and pepper. Use your hands to massage the kale leaves until they start to wilt and reduce down in size. Set aside for 30 minutes. The leaves will soften, making them suitable for eating raw.

    – Place the quinoa in a pot along with the water over high heat and bring to a boil. Once boiling, reduce heat to low, cover with a lid and leave to cook for 13 – 15 minutes. Once cooked, take off the heat, fluff with a fork and set aside to cool.

    – Transfer the quinoa to a large bowl, along with the kale, onion, fresh herbs, most of the walnuts and most of the feta. Drizzle with the Maple Mustard Dressing and toss to combine. Garnish with the remaining feta and walnuts and serve.
