Guacamole Breakfast Sandwich

Packed full of protein and healthy fat, this Guacamole Sandwich is a great way to start your day! Plus, it’ll keep you full well through to lunch.    

Guacamole Breakfast Sandwich

Ingredients

  • Sourdough Bread – 4 Slices
  • Egg – 4
  • Emmental Cheese – 4
  • Butter (unsalted) – 1/4 Cup
  • Salt – to taste
  • Black Pepper – to taste
  • Guacamole – 1 Cup
  • Guacamole (*)
  • Method

    – Heat some oil in a skillet over medium heat.

    – Crack the eggs into the skillet. Cook until white is set but yolk is still runny, about 3 – 5 minutes; season with salt and pepper, to taste.

    – Place a slice of cheese over each egg during the last 30 seconds of cooking. Cover with a lid so that the cheese melts faster.

    – Spread the butter on each slice of bread. Place bread in a heated pan or sandwich press and toast, flipping once, until golden brown on both sides, about 2-3 minutes.

    – To assemble the sandwiches, line up 4 slices of the buttered toasted bread. Spread with the guacamole, top with the egg and cheese and another slice of buttered toasted bread.

    – Serve immediately.
