Grilled Chicken Sandwich

THis Grilled Chicken Sandwich is a great way to repurpose some leftover chicken breast. Paired with some lettuce, tomatoes and dill pickles; this sandwich beats takeout any day! It’s also great to make ahead and enjoy for lunch the following day.   

Grilled Chicken Sandwich

Prep Time : 5 MINUTES

Ingredients

  • Sliced Bread – 2 pc, toasted (any bread will do)
  • Mayonnaise – enough to spread over the toast
  • Lettuce – 2 pc
  • Rotiserrie Chicken – Enough to fill the sandwich, sliced or shredded
  • Tomato – 1 Slice
  • Sliced Dill Pickles – 4 pc
  • Method

    – Spread the mayonnaise over the inside of both slices.

    – Top one side with the lettuce, following by the chicken, pickles and tomato. Top with the cheese (if using) and second slice of bread.

    – Cut in half and serve or pack as a school lunch.
