Greek Salad

This Greek Salad is light, cool and FULL of healthy nutrients. Of course, let’s not forget the added kick when biting into a piece of feta cheese; absolutely delicious!

Serves : 4 – 6

Ingredients

  • Olive Oil – 1/4 Cup
  • Lemon Juice – 2 tbsp
  • Garlic Powder – 1/8 tsp
  • Balsamic Vinegar – 1 – 2 tsp
  • Dried Oregano – 1/2 tsp
  • Fresh Dill – 1 – 2 tbsp
  • Tomato – 3 Medium, chopped
  • Cucumber – 1 Medium or Large, halved and sliced
  • Red/White Onion – Half, thinly sliced
  • Green Capsicum – 1, sliced
  • Olives – 1/3 Cup, black olives, pitted and halved
  • Feta Cheese – 1/4 Cup, crumbled (or more to taste)
  • Salt – to taste
  • Black Pepper – to taste
  • Method

    – Whisk the olive oil, lemon juice, garlic powder, vinegar, oregano, and dill in a bowl until blended. Taste and season with salt and pepper.

    – Combine the tomatoes, cucumber, onion, capsicum and olives in a bowl. Toss with the dressing.

    – Sprinkle with the feta and serve.
