Grandma’s Spaghetti

Grandma’s Spagetti is a super easy weeknight meal that comes together very quickly. If you’re a fan of pasta and goat’s cheese, then this is certainly one for the books!

Grandma’s Spaghetti

Serves : 4
Prep Time : 10 MINUTES
Cooking Time : 10 – 15 MINUTES

Ingredients

  • Spaghetti – 1 Packet, 450g
  • Garlic – 3 Cloves, crushed
  • Fresh Coriander – 1 Cup, chopped
  • Green Capsicum – 1 Small, diced
  • Olive Oil – 5 tbsp
  • Salt – to taste
  • Red Chili Flakes – to garnish
  • Goat Cheese – 1/2 Cup, creamy (optional)
  • Method

    – Bring a large pot of salted water to a boil, and cook the pasta according to package instructions until al dente.

    – Reserve 1/4 cup of the pasta water. Drain and set the pasta aside.

    – In the same pot, heat the oil and sauté the green pepper until softened.

    – Add the garlic and sauté for another 1 – 2 minutes.

    – Transfer the pasta back into the pot and toss with the garlic and green pepper, adding the reserved pasta water to combine everything together.

    – Add the coriander and salt and toss to combine.

    – Serve with a pinch of dried chilli flakes and a couple of dollops of the creamy goat’s cheese (if using).
