French Lentil Ragout

This French Lentil Ragout is a hearty and delicious vegan meal that is high in protein and makes for an easy weeknight dinner. Be sure to finish off with a drizzle of your favourite good olive oil and serve with a crusty bread of choice to soak up all the goodness!

 

French Lentil Ragout

Serves : 4-6
Prep Time : 10 MINUTES
Cooking Time : 20 – 25 MINUTES

Ingredients

  • Olive Oil – 2 tbsp
  • Garlic – 2 Cloves, crushed
  • Red/White Onion – 1 Small, finely diced
  • Carrot – 1 Small, finely diced
  • Butternut Squash – 1, cut into chunks
  • Tomato Paste – 1 tbsp
  • Bay Leaf – 1
  • Fresh Thyme – 1 Sprig
  • Brown Lentils – 1 Cup, rinsed and soaked in water for 30 minutes
  • Vegetable Stock – 3 Cups
  • Salt – to taste
  • Black Pepper – to taste
  • Fresh Parsley – 1/3 Cup, roughly chopped
  • Method

    – Heat olive oil in a large pan over medium heat.

    – Sauté garlic, carrot, squash and onion until softened – around 5-10 minutes.

    – Add tomato paste, bay leaf and thyme. Cook 2 minutes.

    – Drain the lentils, and add to the pot, along with the stock, salt and pepper. Stir, bring to simmer, then lower heat and simmer without a lid for 15 minutes until the lentils are soft, and the squash is tender.

    – Stir in some parsley before serving, and season with more salt and pepper if required.

    – Note: Option to also season the butternut squash with salt & pepper, drizzle with olive oil and roast in the oven until tender, then add to the lentils once they’re cooked. This method is helpful, as the squash takes longer to cook than the other vegetables, and waiting for them to be done may result in mushy lentils.
