Freekeh Soup

This Freekeh Soup is a hearty, grainy soup that works great as a meal in itself. Be sure to save any leftovers and enjoy for Suhoor to keep you satiated into the following day.

Freekeh Soup

Serves : 6 – 8
Prep Time : 15 MINUTES
Cooking Time : 20 – 25 MINUTES

Ingredients

  • Red/White Onion – 1, diced
  • Potato – 1 Small, cubed
  • Cumin – 1/2 tsp
  • Salt – to taste
  • Black Pepper – to taste
  • Chicken Stock – 8 Cups, water will also do
  • Fine Freekeh – 2 Cups
  • Ghee – 1 tsp
  • Method

    – Heat the oil and ghee in a large pot and sauté the onion until translucent and fragrant.

    – Season with salt, pepper and cumin, then add the potatoes and freekeh.

    – Mix until combined, then pour in the stock and bring to a boil. Season with salt, reduce to a simmer, and let cook on low heat for 20 minutes. Taste and add more salt if needed.

    – Take off the heat. Pour soup into a bowl and serve.
