Ingredients
Method
– Heat the oil and ghee in a large pot and sauté the onion until translucent and fragrant.
– Season with salt, pepper and cumin, then add the potatoes and freekeh.
– Mix until combined, then pour in the stock and bring to a boil. Season with salt, reduce to a simmer, and let cook on low heat for 20 minutes. Taste and add more salt if needed.
– Take off the heat. Pour soup into a bowl and serve.
