Fattet Djaj

Try our yufeed chef’s Fattet Djaj recipe this Ramadan. This recipe is great for Suhour. Ramadan Kareem.

Serves : 6 – 8

Cooking Time : 20 – 30 MINUTES

Ingredients

  • Whole Chicken – Boiled and shredded (save 1 cup of the chicken stock)
  • Minced Beef – 250g
  • Arabic 7 spice – 1 tsp
  • Calrose Rice – 1 Cup
  • Water – 1 1/4 Cups
  • Pita Bread – enough to line the base of the serving dish
  • Fresh Parsley – enough to garnish
  • Pine Nuts – enough to garnish
  • Almonds – enough to garnish, peeled and halved
  • Olive Oil – 1/4 Cup
  • Salt – to taste
  • Fatteh Yogurt – 1 Batch
  • Boiled Chicken & Stock (*)

  • Method

    – Heat 2 tablespoons of the oil in a pan and shallow fry the nuts until brown and fragrant.

    – Heat the remaining oil in a pot over medium heat and sauté the meat. Season with salt and 7 spice mix and stir until the meat is mostly cooked through.

    – Add the 1 1/4 cups of water and bring to a boil. Season with more salt and add the rice.

    – Bring back to a boil, then reduce to a simmer, place the lid on top and let cook for approximately 20 minutes on low heat.

    – Start layering with the bread, topped with the rice and meat mixture, chicken, stock and fatteh yogurt and garnish with the parsley and nuts.

    – Serve warm or at room temperature.
