Easy Granola Bake

Full of nutrient packed spices, pecans and oats, this make-ahead Granola breakfast is a great one to have on hand when feeling hurried in the morning. Simply pour into a bowl, top with your milk of choice and sprinkle a handful of blueberries and you have yourself a breakfast that’ll keep you going for hours!  

Easy Granola Bake

Serves : 6
Prep Time : 10 MINUTES
Cooking Time : 40 – 45 MINUTES

Ingredients

  • Oats – 2 Cups, rolled oats
  • Pecans – 3/4 Cups, roughly chopped (or any nuts of choice)
  • Cinnamon – 1 tsp
  • Baking Soda – 1/2 tsp
  • Salt – 1/2 tsp
  • Milk – 1 3/4 Cups, option to use dairy free milk instead
  • Honey – 1/2 Cup, option to use maple syrup instead
  • Egg – 2 Large
  • Butter (unsalted) – 2 tbsp, melted
  • Vanilla Extract or Beans – 2 tsp (optional)
  • Frozen Berries – 2 1/2 Cup, mixed berries or berries of choice
  • Method

    – Preheat the oven to 180°C and grease a square baking dish with either butter or some neutral oil.

    – In a large bowl, mix the oats, ½ cup of nuts, cinnamon, baking soda, and salt.

    – In a separate bowl, whisk the milk, honey, eggs, butter, and vanilla.

    – Pour the wet mixture into the dry ingredients, add the frozen berries, stir it all together, and transfer the mixture to the baking dish.

    – Top with a few extra frozen berries. Then sprinkle the remaining ¼ cup of nuts and pumpkin seeds on top.

    – Bake for 40 minutes, or until set. Serve with yogurt or some maple syrup or honey on the side.
